Grilled Roast Beef

Ingredients

  • 3 pound beef roast
  • cooking oil
  • Salt and pepper (to taste)

Directions

  1. Turn the grill on high and allow it to heat up for 15 to 20 minutes.
  2. Rub the roast with oil. Season to taste with salt and pepper on both sides. Other seasoning can be added if desired.
  3. When the grill is heated, place the roast over the direct heat and sear each side for 4 to 5 minutes.
  4. Once seared, move to an area of indirect heat by leaving one side on medium-high heat and turning off the other side on a gas grill. Place the roast on the side that is turned off. On a charcoal grill hot coals should be moved to one area and the roast should be placed over the area where there are no coals.
  5. Cover the grill and allow the roast to cook for about 1 hour for a medium rare 2-3 lb. roast. The temperature of the grill should be around 400° F. Check for doneness with a thermopro meat thermometer. For medium rare – 145°, medium – 160°, and well done – 170°. Cook for approximately 1 1/2 for medium and 2 hours for well done.
  6. Be sure to check for doneness often because timing can vary depending on roast size and heat of the grill.
  7. Roast should be removed from the grill when it is approximately 5° below desired temperature and then be allowed to set for 15 minutes before carving. In this time the temperature will rise approximately another 5°.
  8. Carve and serve warm.

Whole Chicken Roasted

Ingredients

  • 4-5lb Whole Chicken
  • Butter
  • 2 teaspoons Paprika
  • 1 teaspoon Chili Powder
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Onion Powder
  • Salt or Creole seasoning (to taste)
  • Black Pepper (to taste)
  • 1 Yellow Onion
  • 3 Garlic Cloves

Directions

  1. Clean the chicken: Remove all the giblets, trim, and pat the chicken dry.
  2. Stuff the chicken with the onion and garlic cloves. Tie chicken legs together with kitchen thread.
  3. In a small bowl, mix the seasonings and melted butter. Rub this mixture all over the entire chicken. You can use a basting brush to make this a cleaner process.
  4. To Cook the Chicken: Heat your grill to high heat on one side. You want the temperature inside your grill to be about 375 degrees. To barbecue the chicken, we will be using indirect heat. Place chicken on the barbecue with the legs facing the back of the barbecue on the opposite side of the heat. Close the lid and let cook for 45 minutes and do not open.
  5. Rotate the chicken so the wings are facing the back of the barbecue and close the lid. Let cook for another 40 minutes. Internal temperature of the chicken should be 165 degrees.
  6. Once your chicken reaches an internal temperature of 165 degrees, it is ready to come off the grill. Let the chicken rest for about five minutes. Carve your chicken and serve warm.

BBQ Tri Tip

Ingredients

  • tip beef roast (also known as a triangle roast)
  • Dry rub (to taste)
  • BBQ sauce (to taste)

Directions

  1. Rub the roast with olive oil and sprinkle with dry rub or steak seasoning. Preheat the grill to heat. Insert a thermopro meat thermometer (or have an instant read thermometer handy). Place roast on grill, cook on side one for 3 minutes, turn meat and grill on side two.
  2. Lower gas to medium-low. The temperature of your grill should be between 275-325 degrees. Grill for approximately 20 minutes, baste with sauce.
  3. Sear the roast on both sides.
  4. Using a meat thermometer, cook the steak to your desired temperature: 140°F for medium rare, 145°F for medium. Do not overcook, this cut has very little fat and can dry out quickly
  5. Remove the triangle steak from the grill and allow the meat to rest. Cut thin slices against the grain. Serve warm.

Smoked Pork Tenderloin

Ingredients

  • 1 pork tenderloin
  • 2 Tbsp rub/seasoning
  • 2 Tbsp BBQ sauce
  • 1 Tbsp honey

Directions

  1. Preheat grill/smoker to 250F over indirect heat with apple wood
  2. Trim pork tenderloin by removing silver skin. Apply rub.
  3. Put meat on a smoker and cook at 250F for 30 – 35 minutes. Apply honey and BBQ sauce with a basting brush. Close the lid and let cook for another 15 minutes or until internal meat temp reaches 145F. Remove and let rest for 10 minutes.
  4. Slice and serve warm. As an optional step you can put some butter or vegetables on top (see picture)
