Puré de camote y papa (Peruvian Puree)

Ingredients

  • 1 kg of Camotes (sweet potatoes)
  • 1 kg of yellow potatoes
  • 1 package (8 oz) cream cheese
  • 2 tablespoons BBQ sauce
  • 1/2 cup of milk
  • 4 slices of bacon
  • 1 tablespoon brown sugar
  • 2 green onions

Directions

  1. Cook the sweet potatoes and potatoes in a saucepan of boiling water for 15 minutes, then remove and drain. Put the sweet potatoes in a bowl and the potatoes in a separate bowl.
  2. Mash sweet potatoes and potatoes until light and fluffy, gradually adding half of the cream cheese and half of the milk to each, the same with the BBQ sauce.
  3. Add the bacon and brown sugar to the mashed sweet potatoes and stir; add the chopped green onion to the mashed potatoes and stir.
  4. Mix both purees so they come together. You can mix them completely or in a swirl so that both colors show.

Peruvian Potatoes roast

Ingredients

  • 1kg Peruvian potatoes (Canchán, Huamantanga, Huayro, Black, Yellow, etc.)
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • BBQ Sauce for dipping

Directions

  1. Wash the potatoes well and put all the condiments with the oil in a bowl. Take them to an oiled cooking tray.
  2. Take them to the oven at 180°C for 30/45 minutes until they are soft inside and crispy outside.
  3. Serve as a side dish for meat, fish, chicken, etc. You can dip them in BBQ sauce.

Halloween Sausages

Ingredients

  • 375 g pack Light Puff Pastry
  • 1 tbsp flour, to sprinkle
  • 350 g pack sausages
  • 1 egg, lightly beaten
  • 4 tsp soft cheese, to decorate
  • 1 tsp chopped black olives, to decorate
  • BBQ sauce for dipping

Directions

  1. Preheat the oven to 200°C
  2. Lightly roll out the pastry to 0.5cm thick over a floured surface, and cut vertically into long thin strips, about 0.5cm wide. You’ll need 1-2 strips per sausage, so leave the leftover pastry wrapped up in the fridge for another dish.
  3. Wrap the pastry strips around each sausage to create a mummy-wrap effect. Brush with the beaten egg, then put on a lined baking tray.
  4. Bake in the oven for 18-20 minutes, until the pastry is puffed and golden, and the sausages cooked through. Use blobs of soft cheese for the eyes, then top with a small piece of black olive. Serve them with some BBQ sauce for dipping.

Egg Rolls

Ingredients

  • 2 tbsp vegetable oil
  • 1/2 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/2 cup finely chopped celery
  • 2 cups coleslaw mix
  • 1/2 pound ground chicken
  • 3 tbsp oyster sauce (Or more
  • soy sauce)
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1/2 cup chopped green onions
  • 12 egg roll wrappers
  • oil for frying

Directions

  1. Heat oil in a pan and stir fry garlic, ginger, celery till fragrant. Add the coleslaw mix and cook till the cabbage is wilted.
  2. Add the ground chicken, oyster sauce, soy sauce, sesame oil and sriracha. Stir fry the chicken while breaking it up for 3-4 minutes. Once the chicken is cooked and there is no liquid left in the pan, stir in the green onions and turn off the flame.
  3. To wrap the egg rolls, place the egg roll wrapper so that one corner is towards you. Place a tablespoon of filling in the bottom half (towards you) and wrap that corner over the filling. turn both sides over the wrapper and then continue rolling away from you (like a burrito), till you reach the end. Seal the edges with some water or a beaten egg. Repeat till all the wrappers are made.
  4. Heat oil in a pan (about 2 inches) till it’s 350C. Fry 4-5 egg rolls at a time till they are crisp and golden brown. Serve hot with BBQ dipping sauce (optional).

Homemade Chicken Nuggets

Ingredients

  • 1 ½ pounds chicken breasts cut into 1 ½” chunks
  • ⅔ cup cornflake crumbs
  • ⅔ cup Panko Bread Crumbs
  • 2 tablespoons cornmeal
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon each seasoned salt & pepper
  • 1 tablespoon milk
  • 1 egg beaten
  • cooking spray
  • BBQ sauce for dipping

Directions

  1. Preheat the oven to 400°F. Grease a baking sheet or line with parchment paper.
  2. Crush corn flakes into fine crumbs. Combine crumbs with Panko, cornmeal, and half of the seasonings.
  3. Combine milk, beaten egg and remaining seasonings. Toss chicken the egg mixture and then dip each piece into the crumb mixture pressing the crumbs to adhere.
  4. Place chicken in a prepared pan and spray generously with cooking spray. Bake for 18-22 minutes or if you have a thermopro thermometer you can check until the chicken reaches 165°F.
  5. Dip them in BBQ sauce.

Chipa Cheese Bread

Ingredients

  • 1 ¾ cups cassava flour (or all-purpose flour)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ cup butter, softened
  • 1 1/4 cups grated Parmesan cheese
  • 2 eggs
  • 10 teaspoons milk
  • BBQ sauce for dipping

Directions

  1. Preheat the oven to 375°F. Combine the cassava flour, baking powder, and salt, mix it until combined.
  2. Mix in the cheeses and the butter. Add the eggs and blend until a soft dough has formed. Add 8 teaspoons of milk and mix well. The dough should be compact and lightly moist; if needed, add one or two more teaspoons of milk.
  3. Form 1.5-inch balls and place them on a greased baking tray, leaving a couple of inches between them.
  4. Bake for 15-16 minutes or until the chipas are slightly browned. Let them cool and enjoy! You can dip them in BBQ sauce.

Pumpkin Balls

Ingredients

  • 2 cups of pumpkin puree (it can be canned)
  • 2 eggs
  • 1 teaspoon of cinnamon
  • 1 tablespoon of baking powder
  • 1 cup of sugar
  • a dash of vanilla extract
  • 1 ½ cups of all-purpose flour
  • Oil to fry

Directions

  1. You can cook the pumpkin and rinse it for 30 minutes, you can also buy the puree and also rinse it to eliminate the liquids.
  2. You can use a food processor or a fork for this step. You have to mix all the ingredients together until combined.
  3. Put the oil on a pan at medium heat and with the help of a spoon pour the balls. Cook them until they get a golden brown color.
  4. With a clean kitchen towel remove the excess oil and if you want to you can pour some icing sugar on top. Then serve them warm on a board or a large plate with a small BBQ sauce dip.

Smoked Deviled Eggs

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon BBQ sauce
  • 1 teaspoon white vinegar
  • salt and pepper to taste
  • paprika for garnish

Directions

  1. Hard boil eggs.
  2. Cut each egg in half lengthwise. Remove the yolks and put them in a bowl. Mash the yolks with a fork. Add the mayonnaise, mustard, BBQ sauce and vinegar. Add salt and pepper to taste.
  3. Spoon the filling into the egg white shells. Sprinkle it with paprika. Chill until serving.

Stuffed Tomatoes

Ingredients

  • 4 medium tomatoes with firm walls
  • 1 cup shredded mozzarella cheese (or other cheese of your choice)
  • 1/3 cup grated parmesan cheese, divided
  • 1/4 cup packed fresh basil, chopped, plus more for garnish
  • 1/4 cup breadcrumbs
  • 1 tablespoon melted salted butter
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Olive oil for drizzling
  • BBQ sauce for drizzling

Directions

  1. Preheat the oven to 400°F.
  2. To prepare the tomatoes, you have to slice them in half horizontally around the equator and use a spoon to scoop out the seeds and more. Be careful not to puncture the walls of the tomato
  3. Place empty tomato halves in a casserole dish and season with salt and pepper. Discard the seeds and the tomato water. Chop the flesh and set aside for the stuffing.
  4. To make the stuffing, in a bowl, add the mozzarella cheese (or other of your choice), 1/4 cup of the parmesan cheese, basil, breadcrumbs, butter, garlic, salt, and pepper and stir until combine
  5. Using two spoons, fill the tomato halves with the stuffing. Sprinkle filled tomatoes with the remaining parmesan cheese and drizzle with olive oil and BBQ sauce for a smoked flavor.
  6. Bake for 15 minutes, or until tomatoes are tender, then broil on high for 1 minute until the filling begins to bubble and brown. Then serve it hot on your board.

Mozzarella Sticks

Ingredients

  • 6 mozzarella sticks
  • 1 c. panko bread crumbs
  • Kosher salt
  • Freshly cracked black pepper
  • 2 large eggs, well-beaten
  • 3 tbsp. all-purpose flour
  • BBQ sauce for dipping

Directions

  1. Freeze mozzarella sticks until frozen solid, at least 2 hours.
  2. After 3 hours, set up a breading station: Place panko, eggs, and flour in 3 separate shallow bowls. Season panko generously with salt and pepper.
  3. Coat frozen mozzarella sticks in flour, then dip in egg, then panko, back in the egg, then back in the panko.
  4. Arrange frozen breaded mozzarella sticks in an even layer in the basket of your air fryer. Cook on 400° for 6 minutes, or until golden and crisp on the outside and melty in the center.
  5. Serve them with some BBQ sauce for dipping.
