Papas cuña (Latin American Baked potatoes)

Ingredients

  • 1kg potatoes
  • oil
  • Salt
  • oregano (thyme, rosemary or any other herb can be used)
  • BBQ sauce (for dipping)

Directions

  1. Wash the potatoes and boil water in a pot. Add the potatoes after boiling. Cook for 8 minutes.
  2. Remove the potatoes from the water and let them cool for a few minutes. Cut them into fourths, or sixths, depending on size. Put them in a baking dish with salt and oil.
  3. Bake for approximately 20 minutes, turning them, until the desired point is obtained. Add the fresh herb. Serve hot with some BBQ sauce.

Milhojas de papa (A thousand layer potato)

Ingredients

  • 700 grams of peeled potatoes
  • 300 grams danbo cheese, sliced
  • 2 eggs
  • 100cc milk cream
  • salt, white pepper, nutmeg
  • Optional- BBQ sauce

Directions

  1. Cut the potatoes with a mandolin. In a bowl mix the eggs, cream and seasonings.
  2. Grease an oven-safe plate and fill it with a layer of potatoes, then a layer of cheese, brush with the mixture of eggs and cream, and repeat the operation until you have finished adding all the ingredients and filling the dish.
  3. Cover with aluminum foil and bake for about 50 minutes at 180°.
  4. As an optional step, you can serve pouring some BBQ sauce on top

Sweet potatoes fries

Ingredients

  • 2 sweet potatoes (Calculate 1 per person)
  • sunflower vegetable oil (amount needed for frying)
  • salt to taste
  • pepper to taste
  • BBQ sauce for dipping

Directions

  1. Wash and peel the sweet potato
  2. Already peeled, cut it into strips like French fries
  3. Add oil and until it is hot, place the sweet potato already in pieces (you can also make it round)
  4. Take out, drain the excess oil and add salt to taste. Serve hot and dip them in BBQ sauce.
