Memphis BBQ sauce

Ingredients

  • 1 cup tomato sauce
  • 1/2 cup white vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons yellow mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon kosher salt

Directions

  1. Combine all sauce ingredients in a small saucepan over medium-low heat.
  2. Stir to combine and bring to a simmer.
  3. Simmer for 10 minutes and then remove from heat.
  4. Use immediately or pour into an airtight container and refrigerate for up to 3 days.

Saint Louis BBQ sauce

Ingredients

  • 1 ½ cups tomato puree
  • 1/3 cup distilled white vinegar
  • 3 tablespoons dark corn syrup
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 ½ tablespoons molasses
  • 1/2 teaspoon grated lemon peel
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon thawed orange juice concentrate
  • 2 teaspoons A-1 steak sauce
  • 2 teaspoons of soy sauce
  • 1 teaspoon Tabasco sauce or other hot sauce
  • 1 ½ teaspoon coarse salt (kosher or sea) or more to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper or more to taste
  • 1/4 teaspoon ground cloves

Directions

  1. Combine tomato puree, vinegar, corn syrup, brown sugar, Worcestershire sauce, molasses, lemon zest and juice, orange juice concentrate, steak sauce, soy sauce, Tabasco sauce, salt, onion powder, garlic powder, garlic powder, pepper and garlic cloves in a large heavy non-reactive saucepan over medium-high heat.
  2. Gradually bring to a boil, whisking often. Reduce heat to medium and allow the sauce to simmer until thick and richly seasoned, 6 to 10 minutes, whisking occasionally.
  3. Taste for seasoning, adding more salt and/or pepper as needed.

Kansas city BBQ

Ingredients

  • 2 tablespoons American chilli powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon of table salt
  • 2 cups of tomato sauce (ketchup)
  • 1/2 cup mustard
  • 1/2 cup cider vinegar
  • 1/3 cup English sauce (Worcestershire or Worcester)
  • 1/4 cup lemon juice
  • 1/4 cup meat sauce
  • 1/4 cup of dark molasses
  • 1/4 to 3/4 cup honey
  • 1 teaspoon hot sauce
  • 1 cup dark brown sugar
  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 medium garlic cloves, crushed or minced

Directions

  1. In a small bowl, mix the American chilli powder, ground black pepper, and salt.
  2. In a large bowl, whisk together ketchup, mustard, vinegar, Worcestershire sauce, lemon juice, gravy, molasses, honey, hot sauce, and brown sugar. It is not necessary to mix thoroughly.
  3. Over medium heat, heat the oil in a large saucepan.
  4. Add the onion and sauté for about 5 minutes until soft and translucent. Crush the garlic, add and cook for another minute.
  5. Add the dry spices and stir for about 2 minutes to extract the oil-soluble flavours.
  6. Add the liquid ingredients and simmer for 15 minutes uncovered to thicken slightly. Taste and adjust the flavour. Add more of what you want little by little.
  7. It may taste a bit vinegary at first, but it will be less noticeable when used on meat.
  8. The sauce can be used right away but is best when left overnight.

American BBQ

Ingredients

  • 1 cup of tomato sauce Ketchup.
  • ¼ cup Worcestershire sauce
  • 1/2 cup of honey
  • 2 teaspoons of Dijon mustard
  • 1 clove of garlic or garlic powder
  • A teaspoon of cayenne pepper (to taste)
  • 1 teaspoon brown sugar
  • Salt
  • freshly ground pepper to taste

Directions

  1. Take a pan or a pot, as big as you need.
  2. Add some oil to the pan, and over medium heat, fry the finely chopped garlic. Remember, you must leave them well browned, but without burning them.
  3. Add the rest of the ingredients to the pan and you should let it cook for about 20 minutes.
  4. Mix all the ingredients well so that they are well integrated.
  5. Now is the time to add the salt to taste, add as much as you think is necessary.

Mojo Rojo BBQ

Ingredients

  • 1 head of garlic (approximately 8 cloves of garlic)
  • 2 spicy peppers
  • 1 teaspoon of cumin grain (or alternatively ground)
  • 1 tablespoon sweet paprika
  • 20ml vinegar
  • 150 ml of extra virgin olive oil coarse salt to taste

Directions

  1. With a mortar, mash the peeled and chopped garlic, the cumin if they are in grain, the peppers or piconas clean of seeds and the coarse salt, mash it until they form a smooth and homogeneous paste.
  2. Once you have the paste, add the paprika and very slowly the extra virgin olive oil and the vinegar until you have a thick paste.
  3. If it is too thick you can thin it with a little water.
  4. If you prepare it with the blender, place everything in a bowl and blend until you have a paste similar to a light puree.

Spicy BBQ sauce

  • ½ cup tomato sauce
  • ½ teaspoon garlic salt
  • ½ teaspoon ground dried chilli flakes
  • ¼ cup brown sugar
  • 1 cup rum
  • 2 tablespoons liquid smoke (optional)
  • 2 tablespoons vegetable oil

Directions

  1. Mix all the ingredients for the sauce.
  2. It should be a thick sauce, but if it is very liquid, heat it over medium heat to reduce it to the desired consistency, stirring constantly to avoid sticking and burning.
  3. Let it cool if necessary and use it immediately or store it in the fridge for up to 5 days.

Chimichurri style BBQ sauce

Ingredients

  • 125 ml of extra virgin olive oil
  • 125ml vinegar
  • 4 cloves of garlic
  • 1 tablespoon minced chilli
  • 2 tablespoons of oregano
  • 1 tablespoon finely chopped parsley
  • 1 dessert spoon of thyme and another of cumin
  • 1 tablespoon sweet paprika
  • Salt to taste
  • 200g BBQ sauce

Directions

  1. Start by putting a little extra virgin olive oil in a pan, and add the oregano, thyme, cumin and chilli, letting them take heat for a minute. Remove from heat and add the parsley, paprika and finely chopped garlic.
  2. Add the vinegar and stir until all the ingredients are well mixed.
  3. Once mixed, add the rest of the extra virgin olive oil, and a good pinch of salt, and mix everything with the BBQ sauce.
  4. You can store it in the fridge for up to 5 days.

Asian Style BBQ sauce

Ingredients

  • 6 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar (not seasoned)
  • 1 tablespoon Asian fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1/3 cup minced shallot
  • 2 garlic cloves, minced
  • 1 tablespoon minced peeled fresh ginger
  • 1/8 teaspoon Chinese five-spice powder
  • 1/3 cup sugar

Directions

  1. Stir together all ingredients except sugar in a bowl.
  2. Cook sugar in a saucepan over medium heat, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel.
  3. Tilt pan and carefully pour in hoisin mixture. Cook over low heat, stirring, until caramel is dissolved and sauce is thickened, 6 to 8 minutes.
  4. Cool to room temperature. Serve with shrimp, swordfish, pork, or chicken.

Honey BBQ sauce

Ingredients

  • 200 ml of soy sauce
  • 4 tomatoes
  • 2 onions
  • 120 grams of tomato sauce
  • 1 dessert spoon of sugar
  • 1 dessert spoon of garlic paste
  • 1 tablespoon cornstarch
  • 1 dessert spoon of paprika (paprika)
  • 2 tablespoons of honey
  • 1 pinch of black pepper
  • 2 tablespoons of olive oil
  • 1 pinch of salt

Directions

  1. Bring a pot to medium heat with the olive oil and, once hot, add the tomatoes and onion cut into hulls.
  2. Add a little garlic paste and season the cooking with salt and black pepper to taste.
  3. Cover the mixture with water and add the tomato sauce, paprika, soy sauce and honey.
  4. Let the barbecue sauce with honey cook for about 10-15 minutes and turn off the heat.
  5. Dissolve the cornstarch with a little water and add it to the previous preparation. Let keep for 5 more minutes or until you notice that the barbecue sauce thickens and turns off the heat.
  6. Empty the entire preparation into a bowl and let stand until it reaches room temperature. Once cool, process everything in a blender. Ideally, you should end up with a thick sauce with a slightly smoky flavour. You can pass the result through a strainer or if you prefer you can leave it as it is.

Classic BBQ sauce

  • 2 medium onions
  • 2 cloves of garlic
  • 400 gr of crushed natural tomato
  • 1 tablespoon of honey
  • 1 tablespoon of cane honey
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • The juice of one orange
  • 2 tablespoons of vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons extra virgin olive oil

Directions

  1. Peel and chop the onion and garlic.
  2. Put them in a saucepan with the extra virgin olive oil and cook until they begin to brown, without letting them brown.
  3. Add the crushed tomato, cook for about five minutes and add the rest of the ingredients. Cook over medium heat for about 20 minutes, stirring occasionally.
  4. In this time, the sauce will have reduced and thickened.
  5. Crush very well with the blender and the barbecue sauce is ready.
