Grilled Avocado Stuffed With Veggie Quinoa

Ingredients

FOR THE VEGETABLE QUINOA:

  • 1 cup (150g) quinoa washed and drained
  • 4 green onions sliced
  • ½ small cucumber deseeded and chopped
  • 4 tomatoes finely chopped
  • ¼ cup (50g) cooked sweetcorn kernels
  • 1 handful chopped parsley
  • 1 handful chopped coriander
  • Juice of 1 lemon
  • 1-2 tablespoons olive oil

FOR THE GRILLED AVOCADOES:

  • 12 large avocados
  • 1 lime juiced
  • 1 tablespoon olive oil
  • lime wedges for garnish

Directions

  1. Assemble your ingredients in the following order: cook quinoa according to packet instructions, let cool and transfer to the salad bowl.
  2. After you’ve added the lemon juice and olive oil to the quinoa, give it a good mix. Set it aside for now. Fire up the barbeque and wait till the coals are medium hot.
  3. Halve the avocados and remove the seed, but leave the skin on.
  4. After you brush the avocado halves with lime juice, top it off by adding some olive oil.
  5. Brush the grill with oil and cook the avocados flesh side down for 3 minutes, then remove from the heat.
  6. Fill the avocados with quinoa until they can hold no more, and don’t forget the lime slices on top!
