- 1 cup (150g) quinoa washed and drained
- 4 green onions sliced
- ½ small cucumber deseeded and chopped
- 4 tomatoes finely chopped
- ¼ cup (50g) cooked sweetcorn kernels
- 1 handful chopped parsley
- 1 handful chopped coriander
- Juice of 1 lemon
- 1-2 tablespoons olive oil
FOR THE GRILLED AVOCADOES:
- 12 large avocados
- 1 lime juiced
- 1 tablespoon olive oil
- lime wedges for garnish
