2 tablespoon olive Oil (or more if you think it’s needed)
½ lemon (juiced)
1 tablespoon Mint
1 tablespoon Parsley
For the Grilled Courgettes + White Beans
3-4 Medium Courgettes
1 tin Butterbeans (400g tin)
1 tablespoon olive oil
Directions
For the Salsa
Roughly chop the capers before adding them to your dish. This will help release their flavor and make them easier to cook with.
Coarsely chop the herbs
Place the Capers & Herbs in a small mixing dish and add all of the other ingredients.
Taste and add more lemon or oil if you think it’s required!
For the Courgette & White Beans
Heat the BBQ
Cut the courgettes into thin strips lengthwise.
To prepare the courgette, slice it thinly and coat with oil.
Grill the courgette slices until they have softened and are nicely charred.
Mix the drained white beans and courgettes on a plate.
Afterwards, add a light sprinkling of Salsa Verde. Present the dish with more Salsa Verde on the side for your friends to serve themselves according to taste.
