1/3 cup English sauce (Worcestershire or Worcester)
1/4 cup lemon juice
1/4 cup meat sauce
1/4 cup of dark molasses
1/4 to 3/4 cup honey
1 teaspoon hot sauce
1 cup dark brown sugar
3 tablespoons vegetable oil
1 medium onion, finely chopped
4 medium garlic cloves, crushed or minced
Directions
In a small bowl, mix the American chilli powder, ground black pepper, and salt.
In a large bowl, whisk together ketchup, mustard, vinegar, Worcestershire sauce, lemon juice, gravy, molasses, honey, hot sauce, and brown sugar. It is not necessary to mix thoroughly.
Over medium heat, heat the oil in a large saucepan.
Add the onion and sauté for about 5 minutes until soft and translucent. Crush the garlic, add and cook for another minute.
Add the dry spices and stir for about 2 minutes to extract the oil-soluble flavours.
Add the liquid ingredients and simmer for 15 minutes uncovered to thicken slightly. Taste and adjust the flavour. Add more of what you want little by little.
It may taste a bit vinegary at first, but it will be less noticeable when used on meat.
The sauce can be used right away but is best when left overnight.
