Brisket has a reputation for being unforgiving, but almost every bad brisket traces back to one of a handful of predictable mistakes. Once you know what to look for, most of these problems are easy to avoid.

Dry, crumbly slices almost always mean the brisket was pulled off the smoker or out of the oven too early, before enough collagen and fat had broken down. Brisket is done by feel, not by a single internal temperature number. You are looking for a probe that slides into the thickest part of the flat with almost no resistance, similar to pushing a thermometer into softened butter, which usually happens somewhere between 195 and 205 degrees Fahrenheit but can vary by several degrees from one brisket to the next.

A soggy or rubbery bark is usually a wrapping problem. Wrapping in foil too early, or wrapping a brisket that has not yet developed a firm dark crust, traps steam against the surface and softens the bark you worked hours to build. Wait until the bark can survive a light poke without smearing before you wrap, and consider butcher paper instead of foil if you want a firmer bark with less risk of over-steaming.

The infamous stall, where internal temperature stalls around 150 to 165 degrees for hours, is not a malfunction. It is evaporative cooling as moisture works its way to the surface, and fighting it by cranking the heat too high just risks drying out the exterior before the interior catches up. Wrapping in foil or butcher paper once you hit the stall is the standard fix, since it traps enough heat to push through without needing higher smoker temperatures.

Uneven doneness between the flat and the point is a fat cap and airflow issue. If your smoker runs hotter at one end, position the thicker point toward the hot side and the leaner flat toward the cooler side so both finish closer together. Trimming the fat cap to a consistent quarter inch thickness also helps heat penetrate evenly rather than pooling under thick, uneven fat.

Salty, over-seasoned bark usually comes from applying rub too far in advance on a brisket that was already brined or injected, effectively double salting the meat. If you inject or brine, dial back the salt in your rub to compensate.

Finally, a brisket that tastes fine but looks pale and lacks a smoke ring is often a temperature problem, not a wood problem. Smoke rings form from a chemical reaction that slows dramatically above roughly 140 degrees internal, so a brisket that spends less time in that lower temperature range because the smoker started too hot will show a thinner ring even with plenty of smoke exposure. None of these problems require buying new equipment, just adjusting technique on your next cook.
