Ingredients
- 6 cups seedless watermelon, cut into 1-inch cubes
- 1 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, torn
- 2 tablespoons olive oil
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 cup thinly sliced red onion (optional)
- 1/4 cup toasted pepitas or chopped pistachios, for garnish
Method
- Cut the watermelon into 1-inch cubes, removing any seeds you come across, and place them in a large bowl; try to work over the sink since watermelon juice drips easily.
- If using, add the thinly sliced red onion to the bowl with the watermelon.
- In a small bowl, whisk together the olive oil, lime juice, and salt.
- Drizzle the dressing over the watermelon and gently toss with a large spoon, being careful not to smash the cubes.
- Let the salad sit for 5 minutes so the watermelon soaks up a little of the lime dressing before you add the toppings.
- Scatter the crumbled feta cheese over the top.
- Tear the mint leaves by hand right before serving (this keeps them from browning) and sprinkle them over the salad.
- Scatter the toasted pepitas or pistachios over the top for a bit of crunch.
- Serve immediately, or refrigerate for up to 1 hour; any longer and the watermelon releases too much liquid and the salad turns watery.
Tips
- Serve this salad soon after assembling; watermelon releases a lot of water once salted and dressed, so it does not hold well overnight.
- Tear the mint by hand instead of chopping it with a knife, since cutting mint with metal can cause it to brown and taste slightly bitter.
