Ingredients

  • 6 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, torn
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 cup thinly sliced red onion (optional)
  • 1/4 cup toasted pepitas or chopped pistachios, for garnish

Method

  1. Cut the watermelon into 1-inch cubes, removing any seeds you come across, and place them in a large bowl; try to work over the sink since watermelon juice drips easily.
  2. If using, add the thinly sliced red onion to the bowl with the watermelon.
  3. In a small bowl, whisk together the olive oil, lime juice, and salt.
  4. Drizzle the dressing over the watermelon and gently toss with a large spoon, being careful not to smash the cubes.
  5. Let the salad sit for 5 minutes so the watermelon soaks up a little of the lime dressing before you add the toppings.
  6. Scatter the crumbled feta cheese over the top.
  7. Tear the mint leaves by hand right before serving (this keeps them from browning) and sprinkle them over the salad.
  8. Scatter the toasted pepitas or pistachios over the top for a bit of crunch.
  9. Serve immediately, or refrigerate for up to 1 hour; any longer and the watermelon releases too much liquid and the salad turns watery.

Tips

  • Serve this salad soon after assembling; watermelon releases a lot of water once salted and dressed, so it does not hold well overnight.
  • Tear the mint by hand instead of chopping it with a knife, since cutting mint with metal can cause it to brown and taste slightly bitter.
